Happy Friday everyone! I hope your Friday was good! It was a long day for me but I made it! Today is day 3 of the Christmas Challenge for me. The challenge asks me to share one of my favorite Christmas foods or recipes. I asked my mom if I could share her Biscochos (can also be spelled Bizcochos) recipe. Biscochos are Mexican holiday cinnamon and sugar cookies. The cookies are typically made for weddings and Christmas gatherings. The cookies are very soft and melt in your mouth. What are some of your favorite Christmas foods and recipes?

Biscochos
1 pound of lard
6 cups of flour
2 eggs
2 teaspoons cinnamon
4 teaspoons baking powder
1 cup sugar
1 pinch of salt
1 half cup of Boone’s Farm Strawberry Hill or orange juice
1 half cup anise seed
For the cookie dip
1 cup of sugar
2 tablespoons of cinnamon
Preheat oven to 350 degrees.
Mix lard, sugar, cinnamon, baking powder and salt in a medium-sized bowl with a wooden spoon.
Combine eggs and Boone’s Farm or orange juice with the above ingredients.
Gradually add flour and anise seed.
Use a rolling pin to roll out the dough. Use a star or heart-shaped cookie cutter to shape the cookies.
Bake cookies for 5-10 minutes.
Remove cookies from the oven when the cookies are light brown in color.
For the cookie dip
Mix sugar and cinnamon in a small bowl.
Place cookies in the cinnamon and sugar while they are warm and taken out of the oven.
Makes about 5 dozen cookies

I haven’t even baked any yet. I’ll probably just make chocolate chip for Santa. Lol. My son enjoys baking.

Ohh ok! We have some similar to those. They’re kind of like the ones I shared but with pecans and powdered sugar instead. Those are the best too!

They have the shape of little croissants and are made and dusted with vanilla sugar.

You are so right… somehow it all works out. But I have to admit that I am way behind my schedule and that I simplified a lot this year!!! LOL

Mmm delicious! Chocolate chip are always my favorite! Five different cookies is plenty! What’s Kipferl like? Cherry/Cardamom? It’s funny how we have all of these things to do for the holidays yet…we still make time to blog. I love it! 😊😃

I only did 5 different ones this year: Chocolate chip, Chocolate, Vanilla Kipferl (Austrian recipe), Cranberry/Marshmallow, Cherry/Cardamom
I used to do orange, cinnamon, and many other different cookie variations… but this year I have not enough time!

Oh really? I wonder why it can’t be found. You can use Crisco instead. My mom says they taste better with lard but Crisco is second best.

Lard is impossible to find in the Florida keys, which surprised me because we have a good number of Cubans and Mexicans here. Marathon has two grocery stores and neither of them have lard in stock. The manager of the Winn Dixie said he would check the Big Pine store for me, but they didn’t have it either.
I can’t make authentic biscuits like my Grandma’s without lard. Sad.
