Hi everyone! Happy Mother’s Day to all of the moms out there! I hope you have a wonderful day with your family. Today I’ll be spending time with my grandma and mom. Both women are amazing and strong women. At times, I’m not the easiest person to be around yet they’re still around! It’s going to be hard to ever fill their shoes. I’ve learned so much from both of them in life. Both of them taught me how to cook (even though I’m lazy about it) and so many other life lessons! I always enjoy hearing their stories about growing up in El Paso. Those posts are coming soon.
I’m not just saying this because she’s my mom but my mom is one of the best bakers and cooks I know. I haven’t met a single person who doesn’t like her beautiful and delicious cakes. She makes the cakes and icing from scratch. Several of my co-workers, friends and others purchase her cakes for different occasions. My favorite Cecy’s cake so far is German chocolate. Her strawberry cream cake comes in second. You name any cake or cupcake flavor and she creates it! Another customer favorite is her red candy apples. Even though I’ve watched her make them, there’s SO many steps to it! I’m not sure how she learned how to make them but it’s a long and tedious process. My great-grandpa made them in 50’s and 60’s so who knows, it might be a family recipe that was passed down to her. They’re the kind of apples that melt in your mouth and don’t get stuck to your teeth. She usually sells dozens of candy apples for Halloween, Valentine’s Day and Easter. Oh yeah I forgot to mention, my mom is the biggest die hard Dallas Cowboys fan you’ll ever meet! Her house has TONS of Dallas Cowboys memorabilia. My mom’s been a Cowboys fan since the Roger Staubach days.
My mom has also been my rock after my car accident. She was there for me the day it happened at the hospital. She’s taken me to the hospital and drove me around whenever I needed food or medication. Her driving me around took me back to my school days when she’d drop and pick me up in her little ’88 Honda Civic. I loved that car! My parents gave it to me when I went to college. It was a good little car that lasted 20 years. My mom always supported me during my cross country and track days. She was always cheering me on and cooking me healthy meals. Luckily, I was finally able to buy another car yesterday.
