Hi everyone! I hope you’re doing well! As I mentioned in previous posts, I’m going to include some keto/low-carb friendly recipes every once in awhile. The other day I made stuffed bell peppers with a side of sautéed mushrooms, tomatoes and bell peppers. I’m going to share my version of the recipe here.
4 medium sized bell peppers (feel free to add more if you’d like)
1 lb of ground beef (grass fed meat is best but not necessary).
1 cup of chopped tomatoes
Half a teaspoon of MCT Oil (this is optional)
1/4 cup grated muenster cheese
3 tablespoons tomato sauce
4-5 sprinkles of Salt, pepper, garlic powder and my favorite seasoning…
Claude’s Sauces Great American Steak Seasoning. This seasoning is perfect for ground beef, steak, chicken and pretty much any other meat. The seasoning includes: salt, paprika and other natural spices.
Directions
*Wash and rinse bell peppers. Cut the tops of the bell peppers and remove the seeds. Rinse again.
*Boil bell peppers in a pot of hot water for 10 minutes. Include a couple of pinches of salt and pepper.
*Sprinkle the ground beef with salt, pepper, garlic powder and Claude’s in a pan. Cook meat and tomatoes together in pan. Add MCT oil to ground beef and tomatoes.
*Drain meat in a strainer. Sprinkle meat with Claude’s.
*Stuff the bell peppers with the ground beef and tomatoes.
*Add the muenster cheese and tomato sauce on top of the bell peppers.
*Cook in oven for 30 minutes at 350 degrees.
(Optional) I cooked a chopped up bell pepper and some tomato slices with a couple of drizzles of olive oil, salt and pepper on the side of the stuffed bell peppers. As they were cooking, I sautéed 2 cups of sliced white mushrooms on the stove. They were sautéed in 1/8 cup of butter, 1/8 cup of olive oil and a few sprinkles salt and pepper. Make sure to stir the mushrooms for about 20 minutes in a small pot. Also, if you aren’t doing keto or low carb, you can add cooked white rice with the ground beef. Rice has a lot of carbs so it’s a no no for me. Those who are doing keto can add cauliflower rice to the ground beef and tomato. I don’t care for it at all so I stay away from it. I’ve tried to season it with many different things but it’s too bland. Take care everyone and I’ll see you soon!
